Homemade Jollof Rice

Here's a home-made jollof rice recipe that you can try:

Ingredients:

  • 1 cup vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14.5-ounce) can tomato paste
  • 4 cups chicken or vegetable broth
  • 2 cups long-grain white rice, rinsed
  • 1 tablespoon salt
  • 1 bay leaf

Instructions:

  1. Prep the Rice: Rinse the rice in cold water until the water runs clear. Drain well.
  2. Sauté the Aromatics: Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and sauté until softened and fragrant, about 5 minutes.
  3. Add Spices and Tomatoes: Stir in the curry powder, thyme, cayenne pepper, and black pepper. Cook for 30 seconds more. Add the crushed tomatoes, tomato paste, and broth. Bring to a boil.
  4. Combine Rice and Simmer: Stir in the rinsed rice and salt. Reduce heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  5. Rest and Serve: Remove the pot from the heat and let it rest for 10 minutes before serving. Garnish with fresh cilantro or parsley, if desired.

Tips:

  • Adjust the spice level: If you prefer a milder flavor, reduce the amount of cayenne pepper or omit it altogether.
  • Use fresh ingredients: Fresh tomatoes, peppers, and herbs will give your jollof rice a more vibrant flavor.
  • Don't stir too much: Stirring the rice too often can break the grains and create a mushy texture.
  • Serve with: Jollof rice is traditionally served with grilled or fried chicken, fish, or beef. You can also enjoy it with a side of steamed vegetables or a fresh salad.
